Canapes will be served in the cocktail lounge where we will have an informal meet and greet over Sydney rock oysters, finger lime, sea parsley. Beef jerky, whipped vegemite, wattle seed damper and Sugar cane cured kingfish, pineapple and a puffed rice crackers. Paired with our new favourites the Citray Sour and the blossom madness Fleur Folie.
Following introductions an incredible 3 course meal will be served showcasing some of Australias most understated flavours.
Smoked butter, poached Moreton bay bug, lemon myrtle, goats cheese and sea succulents along side the Wild Tripelle. La Sirenes 100% spontaneous fermented showstopper.
A duo of Kangaroo matched with the Farmhouse Red. Were talking sour cheery sauce, artichoke puree, Farmhouse Red braise. All the good stuff really! BOOM!
Topping it all off with the most decadent dessert we have produced thus far. A dark chocolate delice, rosella and pepper berry icecream with macadamia crumble. Prepare to be blown away with how incredibly well this works with La Sirenes famous Praline, a Belgian chocolate ale AND the Biere de Cerise a wood aged sour ale from the Avant Garde Collection.
King of the wild yeast Costa Nikias and the team will be speaking throughout the evening about the brewery, their passion and why they do things the way they do as will the peeps from Rupert.
